Hi Jessica. Sorry for the delay responding. You asked about:

The obvious requirement would seem to be an unobstructed view of the western horizon. Beyond that, it would seem to depend on what you want in the foreground.
I'd expect there'd be someplace usable at East Chapel Hill HS: it's on the top of the local hill, and with the athletic fields, there ought to be a good horizon.
Another possibility would be one of the taller buildings on Franklin street. You might get something interesting from Top-of-the-Hill Restaurant, for example.
Another good location, with an entirely different atmosphere, but a bit further away, would be the eastern shores of either Jordan or Falls lakes. The Jordan Lake boat ramps are open 24/7, and are 20-30 minutes away by car. Sometimes you can get large birds like cormorants, great blue herons, or even eagles in the field of view.
